Union County, NJ — The Union County Fatherhood Initiative Coalition (UCFIC) is proud to announce two outstanding keynote speakers for its 13th Annual Conference, taking place on April 5, 2025 at the KEAN Universty STEM Building. Super Bowl Champions Bryan Cox and Fred Baxter—both respected NFL veterans and dedicated fathers—will deliver impactful messages centered around resilience, leadership, and the critical role of fatherhood in strengthening families and communities.

Super Bowl Champion | NFL Pro Bowler | Giants Assistant Coach
Bryan Cox brings an extraordinary legacy of excellence both on and off the football field. A Super Bowl champion and three-time Pro Bowler, Cox is currently in his third season as the New York Giants’ assistant defensive line coach, where he plays a key role in developing elite defensive talent.
Cox’s nearly two-decade coaching career has spanned five NFL teams, including the Atlanta Falcons, with whom he helped secure a 2016 NFC Championship and Super Bowl appearance. As a player, Cox enjoyed an illustrious 12-year NFL career with the Miami Dolphins, Chicago Bears, New York Jets, New England Patriots, and New Orleans Saints, culminating in a Super Bowl victory with the 2001 Patriots.
As a father of five and mentor, Cox will speak directly to young fathers about the importance of emotional presence and creating meaningful connections with their children. Drawing from personal experiences, he will share practical guidance on balancing career and family while modeling resilience and accountability.
Fred Baxter
Super Bowl Champion | Entrepreneur | Youth Mentor
Fred Baxter, a former tight end with an 11-season NFL career, brings a message rooted in perseverance, purpose, and service. Drafted by the New York Jets in 1993, Baxter also played for the Chicago Bears and New England Patriots, finishing his NFL journey with a Super Bowl championship in 2003.
Born in Brundidge, Alabama, Baxter’s rise from small-town roots to NFL champion highlights the power of vision and dedication. Today, he is a successful entrepreneur and youth mentor, owning several businesses across industries while remaining deeply committed to community upliftment and youth empowerment.
At the conference, Baxter will speak on fatherhood, accountability, and legacy, encouraging fathers to lead by example and invest in their children’s futures. His powerful narrative will inspire attendees to understand that true success begins at home—with love, commitment, and unwavering support.

With a distinguished 45-year career in the broadcast media industry, William “Bill” Daughtry has built a reputation for excellence in sports coverage and jazz programming. Skilled in Pro Tools, Non-linear Editing, Adobe Audition, Field Production, and News Writing, he has extensive experience across various aspects of media production. A graduate of the State University of New York at Albany, he spent much of his career covering professional and college sports in the New York Metropolitan area, contributing to networks like ESPN Radio, WFAN, and MSG Network. Additionally, he hosted jazz programming on WBGO, a renowned public radio station.
After retiring in September 2019, he continues to remain active in the community. He has served as a moderator at Fatherhood Conferences and a facilitator for Dad Talk conference sessions, sharing his valuable insights and experiences.
